About Us
We are a small team of people in the 10th arrondissement of Paris, right by the Canal Saint Martin. We make almost everything right in our shop. If you are ever in the neighborhood, please stop for a visit. You can see what we are making and even ask us questions. We are happy to share what we know with you.
Jed Jordan is our American-born chocolatier. He trained at Peter Kump’s School of Culinary Arts in New York City and at the Institut National de Boulangerie Patisserie in Rouen. He continued his training with chocolatier Jean-Marc Rué and Keiko Orihara in Paris. Frédéric Bichon is his husband and co-conspirator.
Our goal is to bring the people in our community (both physical and online) the joy and pleasure of artisanal chocolate/confections at a reasonable price. We may not attract the attention of critics or people looking for the perfect Instagram photo, but we aim to do good quality work and in some small way, make the world a happier place.
Who is Denver Williams?
Denver Williams was Jed’s grandfather. He was the first person in Jed’s family to come to Paris – in the summer of 1945, then as a US Army Captain. After returning to the US, he was always cooking and instilled a love for candy-making in his grandson, Jed. The shop is named in his honor. If you visit our shop, you can see photos of him and Jed’s other relatives near their home in the American Midwest.
